What is Cava? A guide to Spain's traditional-method sparkling wine

Cava is Spain's most famous sparkling wine, but it is much more than "Spanish bubbles."

Cava is a quality sparkling wine made using the traditional method — the same essential method used for Champagne. This means that the bubbles are not simply added to the wine. They are created naturally through a second fermentation inside the bottle. The same bottle where the bubbles are born is the bottle that eventually reaches the consumer.

Most Cava comes from Catalonia, especially from the Penedès area, with Sant Sadurní d'Anoia often considered the historic heart of Cava production. The first bottles were produced there in 1872, following the traditional method.

The classic grapes of Cava

The classic grapes of Cava are Macabeo, Xarel·lo and Parellada. Together, they create a style that is fresh, Mediterranean, lively and often more gastronomic than people expect. Macabeo usually brings fruit and softness, Xarel·lo gives structure and freshness, and Parellada adds elegance and delicate aromas.

Ageing on the lees

To be called Cava, the wine must age in the bottle on its lees for at least 9 months. Lees are the spent yeast cells left after fermentation. This contact gives Cava more texture, complexity and sometimes aromas of bread, pastry, nuts or creaminess, especially in longer-aged styles.

Cava can be simple and refreshing, but it can also be serious, complex and aged. Younger Cava is usually bright, citrusy and easy to drink. Reserva, Gran Reserva and Paraje Calificado styles spend longer in the bottle and can develop deeper aromas, finer bubbles and more gastronomic character.

More than an alternative to Champagne

The most important thing to understand is this: Cava is not just a cheaper alternative to Champagne. It has its own grapes, its own Mediterranean climate, its own food culture and its own identity.

It is a wine made for the table — for seafood, tapas, rice dishes, cured meats, fried food, cheeses, vegetables and even more complex meals. Its acidity refreshes the palate, its bubbles clean the mouth, and its texture makes it incredibly versatile with food.
